Kooking with Kristin: Brown Gravy!

So I was wondering what to make for dinner and piecing together something with what we had.  I decided I would make 'Beef Manhattan' type sandwiches with ground beef instead of roast beef (because it was what we had!). To make these, I had to make a gravy for the top. Since I had never made brown gravy before, I went to the Internet to look for a recipe!

Brown Gravy

Here is the Brown Gravy recipe I found on About.com.
Makes 8 Portions of Brown Gravy
Prep Time: 5 minutes, Cook Time: 25 minutes, Total Time: 30 minutes
 Ingredients:
  • 1/2 cup butter
  • 1/2 cup flour
  • 1 clove garlic, minced
  • 1/4 cup ketchup
  • 1 tsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 quart cold beef broth
  • Salt and black pepper to taste

Preparation:

  • In a saucepan, melt the butter over medium-low heat. Add the flour and cook, stirring, for 5 minutes, until the mixture is golden-brown and smells like cooked pie crust.
  • Add the garlic and cook for 30 seconds.
  • Whisk in a cup of the cold beef broth, and then add the rest of the ingredients, except the salt and pepper.
  •  Bring to a simmer, whisking, and then reduce the heat to low and simmer for 20 minutes, stirring occasionally. Taste, and season with salt and pepper.
Other Ingredients for the Dinner:
Toast
Mashed potatoes (I just used instant)
Ground beef

Preparation for the Dinner:
  • While I started the gravy, I browned the ground.
  • Continue to make the gravy until gets to the right consistency.  I did add a little more stock than the gravy recipe called for because it was a little too thick.
  • When the gravy is getting close to completed, Make your mashed potatoes.
  • Toast your bread.
  • Layer your sandwiches with the bread on the plate first. Top with mashed potatoes and gravy and your ready to eat!
I do have to say, that for my first attempt at making gravy, it turned out pretty scrumptious.  Even Owen liked it!  ;).  XXOO, Kristin

My Birthday Weekend!

I do have to take a moment to say what a great birthday I had on Friday, March 9th!!  With my birthday falling on a Friday, though, it turned into a birthday weekend!  ;)  I had so much fun.  And some of you may or may not know, but I have a twin sister (Shannon) that I got to celebrate with also.  She is 30 minutes younger than me and so fun.  Love her so much.
On Friday, I had lunch with my two sisters, Loni and Shannon.  Deano made grilled kabobs on Friday night and we just had fun and relaxed on Friday night.  Owen helped cut up the mushrooms for the kabobs!  He did good with this one, but super cute that Dean put even Owen's super small slivers on the kabobs

Saturday, it was beautiful outside, so we spent a lot of the day outside with the kids.

In the evening, my amazing mom and dad watched all four of our kids (Shannon's two, Ava & Luke + our two kiddos, Owen & Gracie).  As 3-year old Luke would say when I asked him what he and Owen did at their slumber party, "We played Dudes."  Who knows what that means for a 3 and almost 2 year old, but he said it without hesitation.  So cute.  So with Mimi and Po watching the kids, we had an awesome dinner out and then had a few drinks.  It's been quite awhile since we have all had a sitter on the same night.  It was fun to get out to relax, laugh and just listen to great music.

Sunday, we had a great get together with my family when we went to my mom and dad's for my mom's yummy chicken Marsala and Loni brought Holy Cow Cupcakes.  One of my biggest decisions of the weekend had to be ... deciding which of the yummy cupcakes to have!  I'll try to workout extra hard this weekend to make up for all the yummy treats.  It wasn't a productive weekend, but what a blast!  Thank you to everyone for the awesome Birthday Wishes!  Shannon and I really appreciate all the amazing friends and family we have in our lives.  Thanks so much!!!   XXOO, Kristin

Something You May Not Know About Me: My LOVE of Chocolate!

Something you may or may not already know about me . . . I absolutely love chocolate!!  I really like to have a little something chocolate after a meal.  It is a downfall and doesn't help with the diet, but oh well.  In my opinion, a little chocolate here & there helps and keeps you smiling.  So afternoon and late evenings for me usually entail some type of chocolate.  Lately it has been girl scout cookies or M&Ms as the favorites!!

Something You May Not Know About Me: I Can Draw!

I thought I would start a new segment on my blog called 'Something You May Not Know About Me!'. Many of my posts are about things I love...like my brides, grooms, family life or cooking.  But there are many things that make me who I am!  This will be a chance for me to let you in to a few things about myself that you may or may not already know.
I thought I would start off the 'Something You May Not Know About Me' Blog segment dedicated to my love of drawing!  Granted with everything I have going on, I haven't done much in awhile.  But I LOVE to draw!  It has always been something I enjoyed, starting when I was a kid and having my love of coloring books and crayons.  My two sisters both are amazing at drawing too!  My mom, who is going back to college while working and doing everything else she does, even just took a drawing class last semester and drew an amazing picture of my grandma.  My grandma did some very cool paintings and artwork in her day and would like to think we all got out drawing and creative talents from her.  I do have some amazingly talented and crafty aunts and mom, so she is probably right.  ;). So fun!!

Here are three of my favorites that I have displayed in our house . . .
I really love drawing with colored pencils!

Hopefully when things slow down some, I can get back into drawing more again!  XXOO, Kristin

Julie + Mike = Engaged!

Julie & Mike are two amazing people.  I knew from my first talks with Julie that I would love them.  After chatting with Julie the first time, I knew they were special people and I knew it would be a pleasure to be a part of their engagement and wedding day photos.  I have to say that I teared up and got goosebumps regarding Julie's words about the wedding and their relationship.  Such a special couple.  I love to see other people also knowing that they found 'the one' and cherishing each other.

Below are a few of my favorites from the engagement photo shoot and a little more about their love story...
For Julie it was easy to realize when she found Mike to know that she had found 'the one.'  Mike and Julie met through a friend of a friend, so they didn't know each other. They started their relationship by emailing and texting.  It only took about two weeks of emailing before she decided she was ready to meet him in person.  So, they met for about 15 minutes on a Monday night as a way to help break the ice before the first date that Friday.  Fifteen days after they met, Julie started a private blog and kept it a secret from everyone.  She titled it "The One" and this was the first paragraph of the first entry (and P.S. This gives me goosebumps just thinking about!)

"So, I've started this private blog as a record of my search for the one... You know, the one that makes it all worthwhile. The guy you can't live without. Your soul mate. At this point, I think I've found him. It will be interesting to record this journey and see how it all ends."

It only took Julie fifteen days after they first met to think she met the one.  Turns out she was right... :)

She'd have to let Mike tell his own story, but he was a little slower than her to jump in head over feet.  But that describes them perfectly.  Mike is thorough, methodical and ALWAYS reads the directions.  Julie goes with her heart, sees how she feels and only reads the directions if she doesn't get it to work the first time. Ha!
Julie and Mike have had such different schedules for such a long time, that they are now very faithful about having a date night once a week.  Because they have opposite schedules, they cherish that time together.  On their date nights, Mike and Julie will typically head over to a local pub in their neighborhood where they can hang out there all night, have some good food and hang out with friends.  They just like spending time with one another, and whenever they are together they have fun.  Julie thinks it sounds cheesy, but it's true and they like to keep things pretty simple.   They make each other laugh, they just enjoy each others' company and are so thankful for their time spent with one another.
With their wedding, there are so many things they are looking forward to happening.  The moment that Julie is most looking forward to on the wedding day is that special time when Mike and Julie have their first look, when they get to see each other for the first time.  They are taking a couple minutes before the wedding to see each other and have some private moments together.  Julie can't wait for that and it gives her goosebumps when she thinks about it.  She can't wait to see Mike in his tux, Julie can't wait for him to see her in her wedding dress and they can't wait to share that time together.  Just a quick moment, just the two of them before everything gets crazy.  They can't wait for that special part of their wedding day. . .And then the party!  They are looking forward to that too! :)  Lol.  Mike said that he's excited for the honeymoon!!!
When it came to the proposal, this made me tear up a little bit!  So cute.  Their proposal happened on Christmas Eve.  They had just stayed a couple of nights at Julie's parents house in her hometown a couple of hours away.  Mike and Julie were packing up to leave.  Julie's parents, her younger sister, her older sister and her family were all milling around the kitchen while they were gathering kids' coats, presents, etc.  Julie saw Mike had put on his jacket, but she just thought he was ready to start packing the car.  He followed Julie around the corner of the island and then she thought he dropped something.  Julie turned around and Mike was down on one knee holding the most sparkly ring in the world.  After over two years of wondering what Julie would do when he proposed, she surprised herself and said, "I turned into a total girl.  I started crying and just covered my face with my hands.  I don't know how long he was down on one knee, but I know it took me a minute before I finally stammered 'Yes!'."  For Julie's family, it was kind of a domino effect where Mike had asked Julie's dad for permission and her dad, her mom and her older sister knew he was going to ask.  They just didn't know when.  When it was happening, Julie remembers hearing "what?", then gasps and "oh my gosh" and "he's proposing", as they all realized what was going on.  It was such a special moment and Julie couldn't be more thrilled that her family was there to witness it.
I love these pictures with Julie's purple board.  She said she has had it forever, but that with their opposite schedules that they will write each other little notes to each other.  Too cute!
