Kooking with Kristin: Cheeseburger Crockpot Supper!

I loving trying out new meals in the crockpot.  Sometimes I go to the internet and type in the main ingredients I have at the house and see what I come up with!!  So last week I was looking to try something new and had one pound of ground beef.  So I went to Google and typed in "Hamburger Crockpot Recipes" and came up with this one because I had most of the ingredients-and changed up those ones slightly that I didn't have!  hee hee.  This crockpot cheeseburger meal from About.com is made with packaged scalloped potatoes and other ingredients that I had at the house.  It doesn't look all that pretty, but it was yummy.  We ate ours for dinner with garlic toast.  :)

Cheeseburger Crockpot Supper (Serves 4)

Ingredients:

  • 1 to 1 1/2 pounds ground beef
  • 1 medium onion, coarsely chopped
  • 1 box Bacon & Cheddar Scalloped Potatoes  (I just had regular box of scalloped potatoes)
  • 1 can whole kernel corn, undrained    (I had a bag of frozen corn-so used that instead)
  • 1 can cream of celery soup   (I had cream of mushroom soup-so used that instead with a little water)
  • salt and pepper to taste
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 4 thick slices American cheese (or 8 thin slices)

Preparation:

  • In a skillet, brown the ground beef with onions; drain. 
  • Place potatoes and seasoning mix in the slow cooker; top with undrained corn and cream of celery soup.
  • Top potato mixture with ground beef and onions; salt and pepper to taste. Dot evenly with ketchup and mustard; top with cheese slices. 
  • Cover and cook on low for 7 to 9 hours.
