Kooking with Kristin: Stuffed Peppers!

For this 'Kooking with Kristin' Blog Post, I am making Stuffed Peppers!  I thought I would make peppers, because we had two green peppers in the fridge.  The photos are usually just my phone pictures when I am cooking, because it is easier in the moment.  So don't judge the picture quality!!!  I especially really love these stuffed peppers during the summer with our peppers from the garden. Crazy to think that the summer planting of the garden will just be in a few months.  Can't wait!  :)

Ingredients:
  • (4) Green Peppers  (I just had two, so made just the two-had more of the rice/meat mixture)
  • 1 lb ground beef
  • (1) small box rice (I like wild rice or flavored rice, but use white rice or whatever you like or have!)
  • Diced onion
  • Cheese (I just use whatever we have at the time-today we had shredded cheddar cheese and some pepper-jack cheese;  Have used velvetta or other cheeses at other times)

Preparation:
  • Preheat the oven to 350 degrees
  • I like the green pepper a little more done, so I usually put the peppers in the oven when cooking the rice and meat.  So cut off the tops of the green pepper, take out the seeds, put the lids back on and put the green peppers in the oven
  • Follow the instructions on the box to preparing the rice
  • Brown the ground beef in a skillet and put onions in the pan as you are cooking
  • When rice and ground beef are cooked, mix them together
  • Layer inside the peppers with a little cheese in-between scoops of the rice/meat mixture.  Put any excess rice/meat mixture around the peppers in your cooking dish.
  • Cook in the oven for approx 20 minutes or until desired done-ness

    As you know, we are crazy about stuffed peppers also, but I never thought about using flavored rice or wild rice...Thanks for the tip.. Can't wait for the pepper out of the garden! Yummy...
