Kooking with Kristin: Chicken Roulade!

I was making dinner recently to share with a friend and needed to do something a little different due to a food allergy.  I came up with this recipe and I then made it again recently.  Dean and I both agree . . . It is delicious!  Here is the recipe:

Chicken Roulade!

  • Chicken breasts
  • Pesto
  • Cook Bacon
  • Olive oil
  • Kitchen Twine
  • Preheat oven to 400 degrees
  • Pound out chicken to thinner breast (approx 1/3" thickness)
  • Spread pesto onto chicken an layer bacon on top
  • Roll up tightly and secure with twine
  • Sprinkle with salt and pepper
  • Heat skillet on stovetop and add a little olive oil.  Brown the chicken (approx 5 min)
  • Put chicken roulade in baking pan, wrap in foil and place in oven.  Bake approx 45 minutes.  
  • Cut twine and serve.  (Could be sliced, but I decided was great without slicing).


  We served with a baked potato and corn-on-the-cob.  Yum!  XXOO, Kristin
