I was making dinner recently to share with a friend and needed to do something a little different due to a food allergy. I came up with this recipe and I then made it again recently. Dean and I both agree . . . It is delicious! Here is the recipe:
Chicken Roulade!
Ingredients:
- Chicken breasts
- Pesto
- Cook Bacon
- Olive oil
- Kitchen Twine
Preparation:
- Preheat oven to 400 degrees
- Pound out chicken to thinner breast (approx 1/3" thickness)
- Spread pesto onto chicken an layer bacon on top
- Roll up tightly and secure with twine
- Sprinkle with salt and pepper
- Heat skillet on stovetop and add a little olive oil. Brown the chicken (approx 5 min)
- Put chicken roulade in baking pan, wrap in foil and place in oven. Bake approx 45 minutes.
- Cut twine and serve. (Could be sliced, but I decided was great without slicing).
We served with a baked potato and corn-on-the-cob. Yum! XXOO, Kristin
