Kooking with Kristin: Cracker Crumb Chicken Bites!

We recently went to my in-law's house for a super fun hors d'oeuvres party and I had to share this chicken recipe my mother-in-law shared that we made after their party, because it was so yummy.  They aren't good for you, but definitely great for a splurge.  

Cracker Crumb Chicken Bites

  • (4) Chicken Breasts
  • Ritz Crackers (approx 3 sleeves needed for that amount of chicken.  Use saltine crackers if needed or preferred)
  • Eggs (approximately 3 eggs)
  • Vegetable oil
  • Cut the chicken breasts into two-bite nugget size pieces
  • Put crackers into a big ziplock bag and smash into small pieces.  Put them in bowl.  
  • Crack eggs and put into another bowl.  
  • Heat oil in pan to hot temperature.
  • Dip and coat chicken into the egg wash and the dip and cover with crackers.  
  • Then put chicken into oil.  
  • Flip chicken when needed an bottom side is becoming golden brown.  
  • When both sides are golden brown, take out into paper-toweled plate.   
  • Salt and pepper to taste.
