Kooking with Kristin: Cheesy Potatoes!

I was trying to decide what side item to make for dinner and didn't want to do a box or packet mix, so I decided to make cheesy potatoes with what we had at the house.  

Cheesy Potatoes

  • Potatoes
  • Olive Oil
  • Chopped onion
  • Velvetta Cheese
  • Salt and Pepper to taste
  • For cooking the potatoes, I coated with a little olive oil, sprinkled with salt and put in the oven until fork tender.  (But you could fork them, wrap in paper towel and put in microwave until fork tender too)
  • Cut up onion, cut cheese to small cubes (put in the amount of each that your prefer) 
  • Slice potatoes and add the onion and cheese.  Top with salt and pepper to taste.  
  • Cook at 350 degrees until cheese is melted and top is browned.  
Yum and definitely a crowd-pleaser in our house.  XXOO, Kristin
